Fire Cider

Fire cider is my go to when I start feeling like Im coming down with something. Now that school has started I went ahead and whipped up a jar. It lasts a year in the refrigerator.
I know everyone who makes fire cider has a different approach and recipe. This is the one I use.
It has a combination of sweet, spice and sour. If I feel something coming on I take one tablespoon every hour. I've found fresh horseradish and fresh turmeric at Valli Produce for those of you who are in my area.
1 cup yellow onion
1/2 cup grated horseradish
1/4 cup grated ginger
1/2 tsp of ground cayenne pepper
1-2 tablespoons of dried thyme
about an 1/2 inch of fresh turmeric sliced up
1-2 tsp of whole black peppercorns
1/2-1 lemon sliced thin
1/4 cup of honey, or add a little more if you like it really sweet
2 2/3 cups apple cider vinegar, the mother
Place everything into a 1 quart glass jar. Mix it up. Make sure to cover all the ingredients. Give it a really good stir. Cover with a glass or plastic lid. If you use the metal lid with a Ball jar make sure you have a barrier between the lid and jar, like wax or parchment paper so the vinegar doesn't corrode the metal.
Then let the jar sit out for about 2 weeks, for the first few days shake the jar once a day. When the two weeks are up, strain the cider into a clean jar and refrigerate.
